Home made pasta sauce|Pasta sauce using home made tomato puree

I had a busy busy weekend with every one at home the school was almost closed like for a whole 8 days thanks to Diwali and the much awaited/needed rains here in our part of the world.How was Diwali?Everyone had a blast and truck loads of sweets dripping and flooding with sugar and ghee?So try some quick pasta recipes for a lean meal.

How to make pasta sauce at home
I'm sure all of you have used the store bought pasta sauces?I don't like it the one time i got it, it was too tart for me and used it just once and it rotted sitting in the fridge so without much agony about wasting the sauce i dumped it in the garbage.And that was the last time I ever glanced at a jar of pasta sauce.I always make pasta indianised this sauce however is a non indian version without the herbs and just what I had at home.I used it twice with pasta and once in a bowl of oats I loved it all the dishes I tried.

Preparation time: 30 minutes
Makes one small jar as shown in the pics.

 You need

Olive oil 1 tablespoon
Onion finely chopped  1 small
Capsicum finely chopped half a large one or one small
Garlic pods 2 large ones finely chopped
Tomato puree 1/2 cup
Vinegar 2 tsp
Salt to taste
Tomato sauce 2 tablespoon
Carrom seeds/ajwain/omam 1/2 tsp

To make tomato puree:

You need 3 large tomatoes

  • Take the tomatoes and on the bottom side (not the stalk side other side) make a plus shaped cut with a knife.
  • Heat some water and add the slit tomatoes to this allow to boil for 5-6 minutes when you see the peels becoming loose and leaving the flesh of the tomato turn off the heat.Take the tomatoes out of the water and allow to cool.
  • Because of the slits we have made, the peels will come off easily.Put the flesh on the tomato in a blender and make a smooth puree.Tomato puree is ready.You will get around less than half a cup of puree depending on the size of the tomatoes.
To make the sauce:
  • Heat oil in a pan, add the olive oil, garlic, carrom seeds, onion and saute well.Next add the capsicum and fry till soft.
  • Now add the tomato puree and allow to boil well until the raw smell goes away.
  • Now add the vinegar, tomato sauce and salt to taste.
  • Simmer it for 3=4 minutes and turn off the heat.Allow to cool before storing in a dry glass jar.

  • Use directly in your pasta dishes with vegetables or chicken or in a bowl of oats.
Say good bye to store bought tomato puree and pasta sauces.
