Vegan oatmeal Ginger cookies|Whole wheat oatmeal ginger cookies |Christmas Recipes

Christmas is here and I'm sure its the best time of the year for many of us for many reasons like baking, cooking, family time, holiday time and more.Looking at all the pictures in the virtual world i bet i've gained a few pounds just drooling over many c/bakes.This is what i made today to share with my neighbours.

These cookies are whole wheat and i've added a handful of oats to give it that crunch.THe original recipe was a very easy simple quick one I've altered it a bit to go with the season.

Preparation time 1  hour (including baking time)

Whole wheat flour 2 cups
Oats 2 tablespoons (optional)
Ground dry ginger powder/chukku 1 tsp
Baking powder 2 tsp
Brown sugar 1 cup
Oil 1/2 cup
Hot water 1/4 cup
Salt a pinch
Vanilla essence 1 tsp



  • In a bowl, add the brown sugar and oil and mix well with the water.
  • In another bowl add the dry ingredients flour,oats, salt, baking powder, mix well with a fork or whisk.
  • Make a well in the middle of the dry ingredients and pour the wet ingredients and vanilla essence.Mix well with a whisk or like i did use your hands.It comes together pretty quickly no kneading needing.
  • Preheat an oven to 220C and line a baking tray with parchment/butter paper.
  • Pinch balls of the dough and flatten it with your hands arrange on the tray leaving about half inch space it doesn't expand much.
  •  I made the pattern using the back of a butterknife.Use any imprints to many pattern or press a fork on the top of the dough.
  • Bake the cookies at 180C for 35 minutes -45 minutes depending on the thickness of your cookies.
  • Store in air tight container and share with friends.

Vegan whole wheat ginger cookies are ready to adorn your Xmas goodie bag.

Tips :
- The original recipe called for chocolate chips and cinnamon powder i used ground ginger powder instead and oats.
- The brown sugar crystals gave a nice bite to the cookies.
- I didn't bake them too hard they got too crunchy.Mine were soft on the centre and crisp on the outside.
